EMMER is a cereal whose origins date back to the first ancient civilizations of Mesopotamia. The Egyptians learned to cultivate it and spread it throughout the Mediterranean.
Emmer is a natural source of fiber, low glycemic content, contains more complex B vitamins than durum wheat, vitamin A, iron, potassium, magnesium.
In emmer, moreover, gluten is slightly different from wheat, less irritating to the intestine and is present in a smaller quantity, therefore more digestible. It has a more aromatic and sweeter taste than wheat.
