Our mixed pasta is made up of: short “reginelle”, “mezzanine 2 cm.”, “gnocchi”, sliced “linguine” and “mezze fusillate”. Mixed or “pasta ammescata” is something profoundly Neapolitan, even still unknown. Its origin is in the tradition of recovery, when a packet of pasta was made up in homes using the leftovers of others because they were few for the family. Excellent for Neapolitan-style pasta and potatoes, pasta and beans with mussels, pasta and chickpeas, with cauliflower or pumpkin.
